Easy Sesame Pumpkin Pancakes 南瓜餅


It's pumpkin season! These pancakes are different from the American ones because they are more chewy and less fluffy. It's more like a mochi cake because it's made from rice flour. These pumpkin pancakes are a very popular snack in China and they are very easy to make!

Makes 8 pumpkin pancakes

INGREDIENTS
300 g pumpkin in cubes, without skin and seeds removed
150 g glutinous rice flour (you might need more when your dough is too sticky)
100 g sugar
30 g sesame seeds

DIRECTIONS
1. Steam the pumpkin for about 20 minutes until soft.
2. Now your pumpkins might be a little bit wet, drain it. (remove as much water as possible, so your dough won't become too wet)
3. While the pumpkin cubes are still hot, add the sugar and mash it until you get a puree with a fork.
4. Mix in the glutinous rice flour bit by bit and bring it together, knead into a dough. Keep adding flour until the dough doesn't stick to your hand anymore, little at a time! When it becomes too dry, add a little bit of water.
5. Divide the dough in equal size balls, then press it lightly with the palm of your hand so it becomes a disc.
6. Sprinkle with sesame on both sides
7. Put a little bit oil in a frying pan, then pan fry both sides of the disc for about 10-15 minutes on low heat. Flip them occasionally to prevent them from burning. It's done when the discs becomes more translucent and it's darkened in color.
8. Serve warm.
